Sushi is one of those foods that is perfect for any occasion. It is light enough for snack and is complete to start the day. Eating sushi make you too full. The filling option are endless. Seafood, fish, chicken, beef or vegetables. Some sushi variation even come with its own twist and fusion.
What I like mostly about this dish is the beutiful form. I can easily slip in vegetables that I dont really like and barely taste it.
For those who struggle with vegetables or just want a simple no meat sushi. This article is surely for you.
First. I need to emphesis that I am not a sushi expert. I just love simple and pretty food.
Make Homemade Vegetarian Sushi
What I would like to share today is vegetable sushi recipes. You may even call it vegetarian recipes. I got three varian to share today. A box of sushi can cost a fortune. Yet, making it yourself can really spare a lot of money.
The making process is what you are paying for. So, when you make your own sushi and get the momentum. I can guarentee making your homemade sushi can be addicted.
Here are the things that you need to prepare as the basic ingredients for your vegetables sushi.
Ingredients
- Nori sheets
- 1 avocado
- 1 small Japanese cucumber
- 1 cup carrot, cleans and shreds
- 2 cups sushi rice
- 2 cups water
- Black and white sesame seeds, optional
- Bamboo rolling mat
- 1/3 cup of mayonnaise
- 1/4 cup of ketchup sauce
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- Drizzle coconut milk
For sushi sauce:
Directions
Step 1
Cook the sushi rice.
Step 2
Prepare the fillings. Slice avocado and Japanese cucumber nto thin slices.
Step 3
Cover bamboo mat with a Ziploc bag.
Step 4
Lay a sheet of nori on the mat. Put the shiny part down. Dip your finger on water or vinegar befor making the sushi.
Step 5
Spread riceand add sesame seed. Add carrot, avocado and cucumber on top of the nori. And press it thightly with you hand using the sushi mat.
Step 6
Slice the rolled sushi into 6 pieces. Dip the knife with water or rice so it doesnt get stiky.
Step 7
Repeat with process until the nori sheets are all turned into sushi rolls.
To make spicy sushi sauce:
Mix all ingredients in a small bowl and stir it well . Add a drizzle of coconut milk to achieved the right consistency
Vegetable Sushi Variation

If you are up for some twist, then this vegetable sushi variation is right on your alley. I do have to mention that they may differ from your classic sushi.
Like I have said before, I am not a sushi expert. I just love them so much.
Burrito Sushi Wrap
If I want bigger sushi and dont want to struggle with wrapping and rolling the nori sheet. I will make a bigger version.
Burrito Sushi is basically larger sushi with extra filling. You can make batches of burrito, depending on your nori sheet size.
Tofu Sushi
Are you cutting down rice? Or dont have any rice at all? Substitute rice with tofu. You mush the tofu and add it to the nori.
I usually add red pepper, carrot and avocado as crunchy texture to balance the soft tofu.
Sweet Fruity Sushi
A slightly sweet sushi version by adding sweet filling. I dont have a sweet tooth. But this type of sushi makes a great variation.
Add tomatoes, manggo, avocado and top it off with slices of kiwi to your sushi. You got a nice balance of savoury and sweetness.
