The classic Asian food that we can find in Indonesia or Malaysia. It is a typical street food with various sauce, but the most popular is the peanut sauce with soybean. Usually, it comes with skewers and dipping sauce. Some serving allows an abundance of peanut sauce over the satay.
It is mainly use marinated chicken, meat or lamb. We grilled it until golden and tender. So, are you excited to make this dish at home? It is very simple and doesn't take too much time to make.
Ingridients for satay
- Dice meat/lamb/chicken that you can arrange is skewers
- one stalk lemongrass, remove the ends and chopped into small slices
- 1/3 cup of coconut milk tablespoon of ground turmeric
- 2 blocks of palm or brown sugar
- 2 tablespoon of lime
- 2 cloves garlic, chopped
- 1 shallot, chopped
- 1 tablespoon of fresh ginger, chopped
Ingredients for peanut sauce
- half of cup smooth peanut butter or ground peanut, mashed
- 1/4 cup of the reserved marinade
- soy sauce
- salt and sugar
- 1 lime juice
- grate 1 clove of garlic
- 1 tablespoon of freshly grated ginger
- 1/4 cup of boiling water
- as garnish use chopped peanuts and cilantro
How to Make Chicken Satay with Peanut Sauce
You need to do the chicken first and make the sauce afterwards. We also have a variety of sauce that you can try at home.
Step 1
Prepare the skewers. We can use bamboo or stainless steel skewers.
Step 2
Combine lemongrass and coconut milk in a saucepan with medium heat. Bring to a boil don't forget to stir it, turn the stove off and let it rest for about 10 minutes. Reserve the lemongrass pieces for the marinade.
Step 3
Put turmeric powder and chicken to coat and let it rest. Use really small portion of tumeric because it leaves a yelowish colour to the chicken
Step 4
Mix coconut milk, sugar, lime juice, shallot, garlic, crushed chillies, ginger, in a food processor or blender. Aside ¼ cup of the marinade for peanut sauce.
Step 5
Pour leftover marinade and reserved lemongrass and toast it to the chicken bowl. Mix everything until it coats the chicken chunks or waits for it chill in the refrigerator.
Step 6
For the peanut sauce: whisk all sauce ingredients in a small bowl until smooth.
Step 7
Preheat the grill with medium-high heat.
Step 8
Arrange the marinated chicken into skewers and put them on the grill. Get both sides and let it cooked and golden.
Step 9
Take your satay and serve it with peanuts sauce and cilantro.
Variation sauce
If you are allergic to peanut, then you substitute the peanut with sweet soybean with chopped shallot and chilli.
