Sesame Chicken Stir Fry

 The ingredient of Sesame Chicken Stir Fry

4 about 500g chicken thigh fillets thinly sliced

1 garlic clove crushed

2 tablespoons soy sauce

2 tablespoons dry sherry

1 teaspoon brown sugar

2 tablespoons sesame seeds

2 tablespoons peanut oil

5cm piece fresh ginger cut into thin strips

3 green shallots sliced diagonally

1 medium carrot thinly sliced diagonally

300g broccoli cut into small florets

1 tablespoon sesame oil

150g oyster mushrooms

cooked jasmine rice to serve

The Instruction of sesame chicken stir fry

combine chicken garlic soy sauce sherry and sugar in a ceramic or glass bowl cover and place in fridge for 30 minutes to marinate

heat a wok or large frying pan over medium heat add the sesame seeds and toss for 1 2 minutes or until lightly browned and toasted remove from the wok and set aside

drain the chicken and reserve marinade reheat the wok over high heat add 2 teaspoons peanut oil and heat until very hot add 1 2 the chicken and stir fry for 3 minutes or until browned and just cooked through remove from wok repeat with 2 teaspoons more oil and remaining chicken

heat remaining oil in wok add ginger and green shallots and stir fry for 30 seconds or until aromatic add carrot and broccoli and stir fry for 2 3 minutes return seeds and chicken to wok with reserved marinade sesame oil and mushrooms and stir fry for 1 2 minutes or until mushrooms have softened serve immediately with the rice
